I needed something quick for dinner and had most of the ingredients so I went for it. I used sriracha instead of red curry paste, added edamame at the end instead of the bok choy, and fresh chilli instead of chilli crisp. Utterly delicious! And just the right amount of heat. I’ve lost over a stone so far, just by planning ahead a little bit, and being a bit excited about food again. Thanks Max!

They're not essential, just for texture/crunch mainly! Some crushed cashews or crispy onions would be nice
