I used minced lamb. Followed the recipe with ingredients and method. When I tried to remove the meat fro the parchment paper, it wasn't a tight layer like your photo shows.It was like a flattened meat crumble, not too dissimilar to the minced lamb I started with ? Why didn't the meat paste bind ? I'm ready to try again. Thanks

Was it blended to a paste prior to rolling it out? And was lean mince? If it’s not properly blended at the start or if it’s lean, sometimes it has trouble binding together

Hi Max... Thanks for the quick reply. I blended it in a jug blender which wasn't efficient, to be honest. I had to keep pressing the meat mixture down onto to blade as it was just spinning the bottom of the mixture whilst the bulk wasn't getting any action at all. It was lamb mince 15% fat which I would assume is suitable. I'll try again using my food processor.

This was so good, we love kebabs but always just felt awful after and full of grease. This recipe was super easy. The doner was lovely and tasty and we paired it with home Made garlic flat bread. It was perfection and you can enjoy it without feeling bad for the calories,

Yes you could just squeeze and mix the mince/spices/grated together in your hands. Eventually it should resemble more of a paste texture similar to blending 😊
