The cheese sauce seemed to separate , any ideas why?

Sorry to hear that! One reason it may separate is from the heat being too high, so heating slowly and stirring regularly should help. If it’s too hot when the cheddar cheese is added it could also split, so you could try adding the cheddar when it’s off the heat. And it’s also important to make sure the cottage cheese etc. is blended smooth first without any lumps. I hope that helps! 🙏
